Quick banana “bread” in a pan

Three bananas a bit overdue (or just perfectly ripe many would say ; ) made the base for this quick banana “bread” . Make sure that your bananas are really ripe though otherwise you will not get the same lovely sweetness. Quick and easy stir together all (grain free) ingredients and in the bake oven for approx. 20 min and breakfast is ready. Great to serve with sliced bananas, raw cacao nibs and whipped coconut cream.

Once my banana bread had cooled down a bit I served it some really creamy coconut milk, mint and physalis fruit. This was sooo delicious. : )

I used a smaller sized pan and this serves 3 people I would say – depending on how hungry you are ; )

  • Olive oil or coconut oil for the pan
  • 3 smaller bananas mashed
  • 4 organic eggs (size larger)
  • 2 tbs olive oil
  • 1/3 cup full fat creamy coconut milk
  • ½ cup mixed chopped nuts (I used almonds and hazelnuts)
  • 1/3 cup shredded coconut
  • 1 tbs psylllium husk
  • 4 tbs coconut flour
  • ½ baking powder
  • ½ tbs cinnamon (or more if you want)
  • If you prefer to have this “bread” a bit sweeter add some honey as well

Topping
Generously with coconut flakes, raw cacao nibs and chopped hazelnuts

Bake on 175 degrees C/350 degrees F for approx. 20 min, or until golden.
