Smoked salmon rolls with a great filling

A light starter or a really light meal. Food that is ready in no time – just perfect this Friday evening. I have no detailed recipe but see this as some inspiration.

2 small servings

  • 200 gram of sliced smoked salmon
  • 200 gram of peeled shrimps
  • 2 stalks of finely cut celery
  • one small apple finely cut in small pieces
  • dill
  • mini capers
  • mayo
  • white pepper
  • Dijon
  • Lamb´s lettuce and more celery
  • Vinegar and olive oil

Chop your shrimps a bit and mix with the celery and apple. Add a few tbs of mayo (I used my own made of olive oil), Dijon, mini capers, dill and white pepper. I made nice “rolls” – one by using two slices of smoked salmon (a bit overlapping), placed some filling in the middle and rolled it all carefully together. Served the salmon rolls on a bed of Lamb´s lettuce, capers and more celery. Pour some olive oil and vinegar on top too. So easy and really nice! : ) Sometimes I add a bit of curry powder as well. Enjoy!
