New year and cashew yoghurt with fig and applesauce

1 of January and I have a feeling quite a few of you are a bit tired today : ) I had a quiet New Year´s Eve since we had been on the road traveling all day from Germany to Sweden. Came home in the evening and did some speed shopping in the grocery store just to fill up the fridge a bit. Kids wanted tacos (hmm very festive.. ha ha..) – not my idea of a New Year´s dinner but they were happy and that was all that mattered. Dinner was followed by fireworks and then we were off to bed before 22.00. Next year I will most likely be up for a festive party with good friends.

Have you made any new year´s resolutions? I am not really a believer in new year´s resolutions – at least for myself. I think any day of the year can be the date set up for new goals etc. But of course I can understand that for many this specific day can be a great help for motivation. I feel very grateful (can it be that I am getting older?! ha ha ; ) for a new year with new adventures waiting. There are some big birthdays coming up this year and a special wedding, to mention a few things, so this will be a special and fun year in many aspects. Yet, I am very much appreciating everyday small things. It is naturally fun to have something special to look forward to but to be content with what you have everyday is important and just fill your days with laughter’s.

Back to the topic again for this post namely – cashew “yoghurt”. This is a great snack or part of a breakfast. My version is mild, a little bit sweet and creamy. Made without probiotics (I was out of it) but you can add 1-2 capsules probiotics if you like.

CASHEW “YOGHURT” WITH FIG AND APPLESAUCE

1 large portion or two small

  • 1 cup cashews soaked overnight (or at least for a few others)
  • 2 tbsp. homemade applesauce
  • 1 dried (large and not the small ones) soft fig
  • ¼ tablespoon natural (bourbon) vanilla powder
  • 1/2-1 cup of rich/full fat coconut milk
  • 2 capsules of probiotics (optional)

Place your cashews in a bowl with cold water over night or for at least three hours. Rinse them well and dry them a bit in a towel. Place all ingredients and half the amount of the coconut milk in your blender. Turn on high speed. After a while add the remaining coconut milk. Mix until you have a wonderful creamy consistency.

I served my “yoghurt” with chopped lemon balm and blackberries. Enjoy!
